Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, mix together the melted butter, brown sugar, and eggs until blended.
  4. Add the carrots, walnuts, and raisins to the wet ingredients and mix until combined.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
