Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 2 eggs
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Directions
- Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a separate bowl, mix together the melted butter, brown sugar, and eggs until blended.
- Add the carrots, walnuts, and raisins to the wet ingredients and mix until combined.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
