Ingredients
- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- 1 cup packed brown sugar
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup cold butter, cubed
- 1 (14-ounce) can pitted dates, drained
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon fresh lemon juice
Directions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a large bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt.
- Add the butter and mix until the mixture resembles coarse crumbs.
- Press half of the mixture into the prepared baking pan.
- In a medium bowl, mix together the dates, vanilla extract, cinnamon, and lemon juice.
- Spread the date mixture over the prepared crust.
- Sprinkle the remaining oat mixture over the date mixture.
- Bake for 25 minutes, or until the top is golden brown.
- Let cool before slicing into squares.
