Preheat oven to 350°F. Grease an 8-inch square baking pan.
Melt butter and unsweetened chocolate in a saucepan over low heat, stirring constantly until smooth. Remove from heat and let cool.
In a large bowl, whisk together the sugar, eggs and vanilla until light and fluffy. Add the cooled chocolate mixture and whisk until smooth.
In a separate bowl, combine the flour, salt, cocoa powder and instant coffee granules. Add to the chocolate mixture and stir until just combined.
Pour the batter into the prepared pan. In a medium bowl, beat together the cream cheese, sugar and egg until smooth. Drop spoonfuls of the cream cheese mixture over the batter and swirl with a knife. Bake for 30-35 minutes, or until a tester comes out clean.
Let cool before cutting into bars.
