Directions
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Place the red pepper on the baking sheet and roast for 20 minutes, flipping once halfway through. Once roasted, remove from oven and let cool slightly.
Add the chickpeas, roasted red pepper, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper to a food processor and blend until smooth.
Serve the hummus in a bowl and garnish with the chopped parsley.
