Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper and set aside.
In a large bowl, cream butter and sugars together until light and fluffy. Add in the egg and vanilla extract and mix until combined.
In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the chocolate chips. Scoop out the dough onto the prepared baking sheets, about 2 tablespoons of dough per cookie.
Bake for 8-10 minutes, until lightly golden brown. Allow cookies to cool for 5 minutes before transferring to a cooling rack. Enjoy!
