Ingredients

  • 1 (9 inch) unbaked pie crust
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 2 cups chicken broth
  • 2 cups diced cooked turkey
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place the pie crust in a 9 inch pie pan.
  3. In a large skillet, melt butter over medium heat. Add the onion, carrots, and celery, and cook for about 5 minutes, stirring occasionally.
  4. Stir in the flour, salt, pepper, thyme, and rosemary. Gradually stir in the chicken broth. Simmer for 5 minutes, stirring occasionally.
  5. Stir in the turkey, peas, and corn. Pour the mixture into the pie crust.
  6. Sprinkle the mozzarella cheese over the top of the pie.
  7. Bake in preheated oven for 30 minutes, or until the crust is golden brown and the filling is bubbly.
