Ingredients

  • 4 medium russet potatoes, scrubbed, unpeeled, and cut into 1-inch cubes
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons chopped fresh chives
  • Salt and freshly ground black pepper, to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place potatoes on a baking sheet, and bake for 15 minutes, or until lightly browned.
  3. In a large bowl, combine potatoes, bacon, cheese, mayonnaise, mustard, and chives. Season with salt and pepper, to taste.
  4. Transfer to a serving bowl, and serve.
