Ingredients
- 4 medium russet potatoes, scrubbed, unpeeled, and cut into 1-inch cubes
- 6 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 2 tablespoons chopped fresh chives
- Salt and freshly ground black pepper, to taste
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Place potatoes on a baking sheet, and bake for 15 minutes, or until lightly browned.
- In a large bowl, combine potatoes, bacon, cheese, mayonnaise, mustard, and chives. Season with salt and pepper, to taste.
- Transfer to a serving bowl, and serve.
