Ingredients
- 1/2 cup shelled, unsalted pistachios
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper

- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
Directions
- Preheat oven to 375°F (190°C).
- In a food processor, pulse pistachios until coarsely chopped.
- In a shallow dish, combine pistachios, flour, garlic powder, onion powder, black pepper, paprika, and thyme.
- In a large skillet, heat olive oil over medium-high heat.
- Dredge chicken breasts in pistachio mixture, shaking off any excess.
- Place chicken breasts in skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
- Transfer chicken to a baking sheet and bake in preheated oven for 15 minutes, or until chicken is cooked through.
