Heat olive oil in a large skillet over medium-high heat.
Add plantains and cook until golden brown, about 4 minutes per side.
Remove plantains from skillet and set aside.
In the same skillet, add black beans, red onion, red pepper, tomato, cilantro, cumin, salt, and pepper. Cook until vegetables are soft, about 5 minutes.
In a large bowl, combine cooked black beans, plantains, white rice, and cabbage or slaw mix. Stir to combine.
Drizzle lime juice over the top of the bowl, and mix to combine.
Serve warm.
