- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 medium)
- 1/4 cup sour cream
- 1/4 cup chopped walnuts (optional)
Directions
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.
- Add mashed bananas and sour cream, and mix until well combined. Add in dry ingredients, and mix until just combined.
- Pour batter into prepared pan. Bake in preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
