Ingredients

  • 3-4 lb. boneless pork roast
  • 1/2 cup orange juice
  • 1/4 cup white vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. In a large bowl, whisk together the orange juice, vinegar, garlic, cumin, oregano, bay leaves, salt, and pepper. Place the pork roast in the bowl and cover with the marinade. Refrigerate for 30 minutes.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. Heat the olive oil in a large skillet over medium-high heat. Brown the pork roast on all sides, about 5 minutes per side.
  4. Transfer the roast to a roasting pan and pour the marinade over the top. Roast in the preheated oven for 30 minutes, or until the internal temperature of the roast reaches 145 degrees F (63 degrees C). Remove from the oven and allow to rest 10 minutes before slicing and serving.
