Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breasts, cut into cubes
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup canned peaches, drained and chopped
- 1/2 cup chicken broth
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon tomato paste
- 1 tablespoon cornstarch
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
- Add the onion, bell pepper, garlic, chili powder, smoked paprika, cumin, and cayenne pepper (if using). Cook, stirring often, until the vegetables are softened, about 5 minutes.
- Add the peaches, chicken broth, honey, vinegar, and tomato paste. Bring to a simmer and cook until the sauce is slightly thickened, about 10 minutes.
- In a small bowl, whisk together the cornstarch and 2 tablespoons of water. Add to the skillet and stir until the sauce is thickened, about 2 minutes.
- Season with salt and pepper, to taste. Serve with your favorite sides.
