Ingredients

  • 1 ham bone
  • 4 quarts of water
  • 2 cups of dried split peas
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 2 teaspoons of sea salt
  • 1 teaspoon of freshly ground black pepper
  • 1/4 cup of freshly chopped parsley for garnish

Directions

  1. Put the ham bone in a large soup pot and cover with the water. Bring to a boil, reduce heat to a low simmer and cook for 1 hour.
  2. Add the split peas and cook for another 30 minutes.
  3. In a separate pan, heat the olive oil over medium heat and sauté the onion, carrots, and celery for 5 minutes.
  4. Add the garlic, thyme, bay leaf, salt, and pepper. Continue to sauté for an additional 5 minutes.
  5. Add the sautéed vegetables to the soup pot and simmer for another 15 minutes.
  6. Remove the ham bone and discard. Taste and adjust seasonings as needed.
  7. Serve the soup with freshly chopped parsley for garnish.
