Ingredients
- 1 ham bone
- 4 quarts of water
- 2 cups of dried split peas
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks of celery, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 bay leaf
- 2 teaspoons of sea salt
- 1 teaspoon of freshly ground black pepper
- 1/4 cup of freshly chopped parsley for garnish
Directions
- Put the ham bone in a large soup pot and cover with the water. Bring to a boil, reduce heat to a low simmer and cook for 1 hour.
- Add the split peas and cook for another 30 minutes.
- In a separate pan, heat the olive oil over medium heat and sauté the onion, carrots, and celery for 5 minutes.
- Add the garlic, thyme, bay leaf, salt, and pepper. Continue to sauté for an additional 5 minutes.
- Add the sautéed vegetables to the soup pot and simmer for another 15 minutes.
- Remove the ham bone and discard. Taste and adjust seasonings as needed.
- Serve the soup with freshly chopped parsley for garnish.
