Directions
Preheat oven to 400° F (200° C). Grease a 12 count muffin tin.

In a medium bowl, whisk together buttermilk, oil, and egg. Pour wet ingredients into dry ingredients and stir just until combined.
Divide batter evenly among muffin cups. Bake for 15-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Remove from oven and let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
