Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
Directions
- Preheat oven to 400° F (200° C). Grease a 12 count muffin tin.
- In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt. Set aside.
- In a medium bowl, whisk together buttermilk, oil, and egg. Pour wet ingredients into dry ingredients and stir just until combined.
- Divide batter evenly among muffin cups. Bake for 15-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Remove from oven and let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
