Ginger-Orange Brussels Sprouts

Ingredients

  • 2 pounds Brussels sprouts
  • 2 tablespoons olive oil
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup orange juice
  • 1/4 cup freshly chopped cilantro
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. Cut Brussels sprouts in half lengthwise and place in a large bowl.
  3. Add olive oil, ginger, salt, and pepper and toss to combine.
  4. Spread Brussels sprouts on a baking sheet and roast for 20 minutes.
  5. Remove from oven and add orange juice, cilantro, and Parmesan cheese. Toss to combine.
  6. Return to oven and bake for 5 more minutes, or until Brussels sprouts are tender.
  7. Serve warm.
