Ingredients
- 2 pounds Brussels sprouts
- 2 tablespoons olive oil
- 1 tablespoon freshly grated ginger
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup orange juice
- 1/4 cup freshly chopped cilantro
- 1/4 cup freshly grated Parmesan cheese
Directions
- Preheat oven to 375 degrees F.
- Cut Brussels sprouts in half lengthwise and place in a large bowl.
- Add olive oil, ginger, salt, and pepper and toss to combine.
- Spread Brussels sprouts on a baking sheet and roast for 20 minutes.
- Remove from oven and add orange juice, cilantro, and Parmesan cheese. Toss to combine.
- Return to oven and bake for 5 more minutes, or until Brussels sprouts are tender.
- Serve warm.
