Ingredients

  • 1/3 cup soy sauce
  • 1/3 cup sake (or white wine)
  • 1/4 cup mirin (or honey)
  • 1/4 cup light brown sugar
  • 2 tablespoons sake (or white wine)
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic, minced

Directions

  1. In a medium saucepan, combine the soy sauce, sake, mirin, and light brown sugar.
  2. Bring the mixture to a boil, stirring occasionally.
  3. Reduce the heat to low and simmer for 5 minutes.
  4. Remove the sauce from the heat and stir in the sake, ginger, and garlic.
  5. Allow the sauce to cool to room temperature before using.
