Ingredients

  • 1 cup of all-purpose flour
  • 2 eggs
  • 1/2 cup of milk
  • 2 tablespoons of butter
  • 1/4 teaspoon of salt
  • 1/2 cup of granulated sugar
  • 1/4 cup of water
  • 1 teaspoon of vanilla extract

Directions

  1. In a medium bowl, whisk together the flour, eggs, milk, butter, and salt until smooth.
  2. Heat a lightly oiled skillet over medium-high heat. Pour a scant ¼ cup of batter into the skillet and swirl to spread the batter evenly.
  3. Cook the crepe until lightly browned, about 2 minutes. Flip and cook the other side for 1 minute. Remove to a plate with parchment paper.
  4. Repeat with the remaining batter.
  5. In a medium saucepan, combine the sugar, water, and vanilla extract. Stir and cook over medium heat until the sugar is dissolved and the mixture is bubbling. Simmer for 5 minutes, stirring occasionally. Remove from heat and let cool.
  6. To serve, spoon the caramel syrup over the crepes and enjoy!
