Paleo Chocolate Chip Muffins
Ingredients
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
4 slices of bread (white, whole wheat, or french bread)
2 tablespoons butter or margarine
Maple syrup and/or powdered sugar (optional)
Directions
In a shallow bowl, whisk together the eggs, milk, vanilla, and cinnamon. Set aside.
Heat a large skillet or griddle over medium heat and melt the butter.
Dip the slices of bread into the egg mixture, making sure to coat both sides. Place the bread slices in the skillet or griddle.
Cook for 3-4 minutes, or until golden brown. Flip the slices of bread and cook the other side for an additional 3-4 minutes.
Remove from heat and serve with maple syrup and/or powdered sugar, if desired.
