Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 large butternut squash, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 cup chopped fresh parsley (optional)
Directions
- In a large pot, bring the sweet potatoes and butternut squash to a boil. Boil for 15-20 minutes or until tender.
- Drain the vegetables and return them to the pot.
- Add the butter, milk, salt and pepper and mix well.
- Using a potato masher, mash the vegetables until they are the desired consistency.
- Stir in the parsley, if desired.
- Serve hot.
