Ingredients

  • 1 lb. Shrimp (peeled and de-veined)
  • 2 cups Grits
  • 4 cups Chicken Stock
  • 1 Onion (diced)
  • 3 cloves Garlic (minced)
  • 1/4 cup Butter
  • Salt and Pepper to taste
  • 1/4 cup Parsley (chopped)
  • 1/4 cup Parmesan Cheese (grated)

Directions

  1. In a large pot, bring the chicken stock to a boil. Add the grits and reduce the heat to low. Simmer for 20 minutes, stirring occasionally.
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the shrimp and cook until they are just pink, about 3 minutes.
  3. Add the cooked grits to the shrimp and stir to combine. Cook for an additional 2 minutes. Add the parsley and season with salt and pepper to taste.
  4. Serve the shrimp and grits in bowls topped with parmesan cheese.
