Ingredients
- 4 medium beets, peeled and cut into wedges
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1 teaspoon mustard seed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
Directions
- Place the beets into a pot of boiling water and cook for 15 minutes, or until tender.
- Drain the beets and place them in a bowl.
- In a separate bowl, combine the vinegar, sugar, mustard seed, cinnamon, nutmeg, cloves and salt.
- Pour the mixture over the beets and stir to combine.
- Place the beets into a jar and store in the refrigerator for up to 3 months.
