Ingredients

  • 4 medium beets, peeled and cut into wedges
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1 teaspoon mustard seed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Directions

  1. Place the beets into a pot of boiling water and cook for 15 minutes, or until tender.
  2. Drain the beets and place them in a bowl.
  3. In a separate bowl, combine the vinegar, sugar, mustard seed, cinnamon, nutmeg, cloves and salt.
  4. Pour the mixture over the beets and stir to combine.
  5. Place the beets into a jar and store in the refrigerator for up to 3 months.
