- 1 cup all-purpose flour
- 1 teaspoon baking powder

Directions
- Preheat oven to 350°F. Grease a mini muffin pan with non-stick cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
- In a large bowl, combine the pumpkin puree, vegetable oil, brown sugar, egg, and vanilla extract, mixing until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the cinnamon chips.
- Scoop the batter into the prepared muffin pan, filling each cup about three-quarters full. Bake for 12-15 minutes, or until a toothpick inserted into the center of one of the muffins comes out clean.
- Let the muffins cool for a few minutes in the pan before transferring to a wire rack to cool completely.
