- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 3 cloves garlic, minced
- 1/2 jalapeno pepper, seeded and minced
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon sugar
- Salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh cilantro leaves
Directions
- In a large bowl, combine black-eyed peas, black beans, corn, bell pepper, red onion, garlic, and jalapeno pepper.
- In a small bowl, whisk together vinegar, olive oil, cumin, sugar, salt, and pepper.
- Pour dressing over the bean mixture and stir to combine.
- Cover and refrigerate for at least 1 hour.
- Before serving, stir in cilantro.
