Ingredients

  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 3 cloves garlic, minced
  • 1/2 jalapeno pepper, seeded and minced
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped fresh cilantro leaves

Directions

  1. In a large bowl, combine black-eyed peas, black beans, corn, bell pepper, red onion, garlic, and jalapeno pepper.
  2. In a small bowl, whisk together vinegar, olive oil, cumin, sugar, salt, and pepper.
  3. Pour dressing over the bean mixture and stir to combine.
  4. Cover and refrigerate for at least 1 hour.
  5. Before serving, stir in cilantro.
