Ingredients
- 4 medium zucchini (about 2 pounds), trimmed and cut into ½-inch slices
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.
- In a large bowl, combine zucchini, Parmesan cheese, garlic, olive oil, parsley, oregano, salt, and pepper. Toss to combine.
- Spread the zucchini mixture into the prepared baking dish. Cover with aluminum foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve warm.
