Zucchini and Parmesan Gratin

Ingredients

  • 4 medium zucchini (about 2 pounds), trimmed and cut into ½-inch slices
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.
  2. In a large bowl, combine zucchini, Parmesan cheese, garlic, olive oil, parsley, oregano, salt, and pepper. Toss to combine.
  3. Spread the zucchini mixture into the prepared baking dish. Cover with aluminum foil.
  4. Bake for 25 minutes, then remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  5. Serve warm.
