Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup orange juice
  • 1/2 teaspoon orange zest
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8x4 inch loaf pan.
  2. In a medium bowl, combine the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar. Beat in the eggs one at a time. Stir in the orange juice and orange zest.
  4. Gradually stir the dry ingredients into the wet ingredients. Fold in the cranberries and walnuts.
  5. Pour the batter into the prepared pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
