Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup orange juice
- 1/2 teaspoon orange zest
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8x4 inch loaf pan.
- In a medium bowl, combine the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar. Beat in the eggs one at a time. Stir in the orange juice and orange zest.
- Gradually stir the dry ingredients into the wet ingredients. Fold in the cranberries and walnuts.
- Pour the batter into the prepared pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
