In a large bowl, combine the apples, brown sugar, flour, cinnamon, nutmeg, melted butter and pecans. Mix until ingredients are well blended.
Place one of the pie crusts into a 9-inch pie plate. Spoon the apple mixture into the crust and spread evenly.
Top with the remaining pie crust and crimp the edges together. Cut several slits in the top crust to allow steam to escape.
Bake for 25 to 30 minutes, or until the crust is golden brown and the apples are tender.
In a medium saucepan, combine the cream, sugar, cornstarch and vanilla. Cook over medium heat, stirring constantly, until thick and bubbly. Reduce heat and simmer for 1 minute.
Serve the pie warm or at room temperature with the vanilla sauce.
