Ingredients

  • 4 pork chops
  • 1 tablespoon of olive oil
  • 1/2 cup of sherry
  • 1/2 cup of chicken broth
  • 1/2 teaspoon of dry thyme
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 cup of mushrooms, sliced
  • 2 tablespoons of butter
  • 1/4 cup of flour
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Season the pork chops with salt and pepper and add them to the skillet.
  3. Cook for 3-4 minutes per side, until they are golden brown and cooked through.
  4. Remove the pork chops from the skillet and set aside.
  5. Add the sherry, chicken broth, thyme, garlic powder, and onion powder to the skillet and bring to a boil.
  6. Add the mushrooms and simmer for 5 minutes.
  7. In a small saucepan, melt the butter over medium-low heat.
  8. Add the flour and whisk until combined.
  9. Gradually add the butter-flour mixture to the sherry-mushroom mixture, whisking constantly.
  10. Bring the mixture to a boil and simmer for 5 minutes, stirring occasionally.
  11. Add the pork chops back to the skillet and simmer for 5 minutes, or until the pork chops are heated through.
  12. Serve the pork chops with the sherry mushroom gravy.
