In a large bowl, combine apples, rose water, white sugar, brown sugar, flour, cinnamon, nutmeg, and salt. Toss until apples are evenly coated.
Pour apple mixture into pie crust. Dot with butter.
Bake in preheated oven for 15 minutes. Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 40 minutes, or until apples are tender and crust is golden brown.
