Ingredients

  • 1 cup cooked chickpeas
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup tahini
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 2 cups baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Burrata cheese, torn into pieces

Directions

  1. In a food processor, combine chickpeas, olive oil, tahini, garlic, lemon juice, salt, cumin, and coriander. Process until smooth.
  2. In a large bowl, combine spinach, tomatoes, olives, parsley, mint, and basil. Add the hummus and mix until combined.
  3. Divide the salad among four plates. Top each plate with torn pieces of Burrata cheese.
  4. Serve and enjoy!
