Ingredients
1 pound fresh cod fillets
2 tablespoons butter
1 large potato, peeled and grated
1/2 teaspoon sea salt
1/4 teaspoon black pepper

Directions
Preheat oven to 400°F.
Melt butter in an oven-safe skillet over medium heat.
In a medium bowl, combine grated potato, salt, and pepper.
Dredge cod fillets in potato mixture until fully coated.
Add olive oil to melted butter in the skillet. Place cod fillets in the skillet and cook for 3 minutes.
