Ingredients

  • 1 cup of dry green lentils
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of cayenne pepper (optional)
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 4 cups of vegetable broth
  • 1 large bunch of kale, stems removed and leaves chopped
  • 1/4 cup of chopped cilantro (optional)

Directions

  1. In a large pot over medium heat, add the lentils, onion, garlic, cumin, coriander, paprika, turmeric, cayenne pepper (if using), salt, and pepper.
  2. Stir to combine and cook for a few minutes until fragrant.
  3. Add the vegetable broth and bring to a boil.
  4. Reduce the heat to a simmer and cover the pot. Cook for 15 minutes.
  5. Add the kale and cook for an additional 5 minutes until the lentils are tender and the kale is wilted.
  6. Stir in the cilantro (if using).
  7. Serve warm.
