Ingredients
1 cup of dry green lentils
1 medium onion, chopped
3 cloves of garlic, minced
1 teaspoon of ground cumin

Directions
In a large pot over medium heat, add the lentils, onion, garlic, cumin, coriander, paprika, turmeric, cayenne pepper (if using), salt, and pepper.
Stir to combine and cook for a few minutes until fragrant.
Add the vegetable broth and bring to a boil.
Reduce the heat to a simmer and cover the pot. Cook for 15 minutes.
Add the kale and cook for an additional 5 minutes until the lentils are tender and the kale is wilted.
Stir in the cilantro (if using).
Serve warm.
