Ingredients

  • 1 pack sotanghon (glass noodles)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 small carrot, sliced
  • 1 cup cabbage, shredded
  • 1/4 cup soy sauce
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sugar
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped

Directions

  1. Soak the sotanghon in warm water for 15 minutes. Drain and set aside.
  2. Heat the oil in a wok or large skillet over medium heat. Add the garlic and onion, and cook until the onion is soft and beginning to brown, about 5 minutes.
  3. Add the bell pepper, carrot, and cabbage, and cook for about 3 minutes.
  4. Add the sotanghon, soy sauce, black pepper, and sugar. Cook, stirring constantly, until the noodles are cooked through and the vegetables are tender, about 5 minutes.
  5. Stir in the green onions and cilantro, and cook for an additional minute.
  6. Serve hot.
