Ingredients

  • 3 cups cooked salmon
  • 1/4 cup butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 (14.1-ounce) package refrigerated pie crusts

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a large skillet over medium-high heat, melt the butter. Add the onion and garlic and sauté until softened and fragrant, about 5 minutes.
  3. Add the flour and stir to coat the onion. Slowly pour in the chicken broth and stir until combined. Simmer for 8 to 10 minutes, or until the mixture has thickened.
  4. Stir in the cream, salt, pepper, thyme, peas, corn, and cooked salmon. Simmer for 5 minutes.
  5. Roll out one of the pie crusts and place it in an 8-inch pie plate. Pour the salmon mixture into the crust.
  6. Roll out the second pie crust and place it on top. Crimp the edges to seal.
  7. Bake for 25 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Allow to cool for 10 minutes before serving.
