Ingredients

  • 2 cups yuca, peeled and diced
  • 2 plantains, peeled and sliced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 cup vegetable broth
  • 1 cup grated cheese
  • 1/2 cup chopped cilantro
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, red pepper, green pepper, garlic, cumin, oregano, and yuca; cook until vegetables are tender, about 10 minutes.
  3. Add plantains and vegetable broth; cook until broth is absorbed, about 10 minutes.
  4. Transfer mixture to a 9x13 inch baking dish. Top with grated cheese and cilantro. Bake in preheated oven for 20 minutes, or until cheese is melted and golden.
  5. Serve hot.
