Preheat oven to 375°F. Cut cauliflower into florets and place on a baking sheet. Drizzle with olive oil and season with salt. Roast for 20 minutes or until golden brown.
Meanwhile, place cashews, garlic, Italian seasoning, salt, nutritional yeast, almond milk, and olive oil in a blender. Blend until smooth and creamy.
Add the roasted cauliflower to the blender and blend again until creamy.
Transfer the sauce to a saucepan and heat over medium-low heat. Cook for 5 minutes, stirring occasionally.
Serve over your favorite pasta, on top of pizza, or by itself. Enjoy!
