Ingredients

  • 3 tablespoons butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 1 head of broccoli, cut into florets
  • 2 cups shredded cheddar cheese
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Melt butter in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the chicken stock and bring to a boil.
  4. Add the broccoli and reduce the heat to low. Simmer for 15 minutes.
  5. Add the shredded cheese and stir until melted.
  6. Season with cayenne pepper, salt, and pepper.
  7. Serve hot.
