Ingredients
2 cups all-purpose flour
1 cup butter, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
3 cups rhubarb, diced
1/4 cup light brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
In a medium bowl, combine the 2 cups of flour, butter and sugar. Mix until crumbly. Press the mixture into the prepared pan.
In a separate bowl, mix together the rhubarb, brown sugar, 2 tablespoons of flour and cinnamon. Spread the mixture over the crust.
Bake in preheated oven for 35 to 40 minutes, or until golden brown.
Let cool before cutting into bars.
