Ingredients

  • 2 cups all-purpose flour
  • 1 cup butter, room temperature
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 cups rhubarb, diced
  • 1/4 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. In a medium bowl, combine the 2 cups of flour, butter and sugar. Mix until crumbly. Press the mixture into the prepared pan.
  3. In a separate bowl, mix together the rhubarb, brown sugar, 2 tablespoons of flour and cinnamon. Spread the mixture over the crust.
  4. Bake in preheated oven for 35 to 40 minutes, or until golden brown.
  5. Let cool before cutting into bars.
