Pasta with Cilantro Pesto and Barley

Ingredients

  • 8 ounces of whole wheat pasta
  • 1 tablespoon of olive oil
  • 1 cup of cooked barley
  • 1/2 cup of fresh cilantro leaves
  • 1/4 cup of olive oil
  • 1/4 cup of freshly grated Parmesan cheese
  • 1/4 cup of toasted pine nuts
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the cooked barley and cook, stirring often, until lightly browned, about 5 minutes.
  3. Meanwhile, make the pesto. In a food processor, combine the cilantro, olive oil, Parmesan, pine nuts, garlic, salt and pepper. Pulse until a coarse paste forms.
  4. Drain the cooked pasta and return it to the pot. Add the barley and pesto and stir to coat. Serve warm.
