Ingredients
- 3 cups kale, chopped
- 1 cup cooked quinoa
- 1 avocado, cubed
- 1/4 cup sliced almonds
- 1/4 cup lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large bowl, combine the kale, quinoa, avocado and almonds. Toss gently to combine.
- In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, salt and pepper.
- Pour the dressing over the salad and toss to coat.
- Serve chilled or at room temperature.
