Ingredients
3 cups kale, chopped
1 cup cooked quinoa
1 avocado, cubed
1/4 cup sliced almonds
1/4 cup lemon juice
1 tablespoon Dijon mustard
1 tablespoon olive oil

1/4 teaspoon pepper
Directions
In a large bowl, combine the kale, quinoa, avocado and almonds. Toss gently to combine.
In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, salt and pepper.
Pour the dressing over the salad and toss to coat.
Serve chilled or at room temperature.
