Ingredients

  • 3 cups kale, chopped
  • 1 cup cooked quinoa
  • 1 avocado, cubed
  • 1/4 cup sliced almonds
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a large bowl, combine the kale, quinoa, avocado and almonds. Toss gently to combine.
  2. In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, salt and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve chilled or at room temperature.
