- 3 eggs

Directions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
- In a large bowl, beat eggs with a whisk until thick and light yellow.
- Gradually add in the sugar while whisking until mixture is thick and pale.
- Whisk in the olive oil and orange juice until well blended.
- In a separate bowl, sift together the flour, baking powder, cardamom, cinnamon, nutmeg, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Fold in the orange zest.
- Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
