Ingredients
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/3 cup powdered sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam
- 1/4 cup sliced almonds
Directions
- Preheat oven to 350°F.
- In a medium bowl, mix together the flour and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the egg yolks and vanilla extract and mix until combined.
- Add the flour mixture to the butter mixture and mix until just combined.
- On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
- Using a round cookie cutter, cut out circles of dough and place them on a parchment-lined baking sheet.
- Spoon 1 teaspoon of raspberry jam onto the center of each circle.
- Fold the edges of each circle up and over the jam, forming a tart shape.
- Sprinkle the tops with sliced almonds.
- Bake for 15-20 minutes, or until golden brown.
- Allow to cool before serving.
