Ingredients

  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1/3 cup powdered sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1/4 cup sliced almonds

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, mix together the flour and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg yolks and vanilla extract and mix until combined.
  5. Add the flour mixture to the butter mixture and mix until just combined.
  6. On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
  7. Using a round cookie cutter, cut out circles of dough and place them on a parchment-lined baking sheet.
  8. Spoon 1 teaspoon of raspberry jam onto the center of each circle.
  9. Fold the edges of each circle up and over the jam, forming a tart shape.
  10. Sprinkle the tops with sliced almonds.
  11. Bake for 15-20 minutes, or until golden brown.
  12. Allow to cool before serving.
