Ingredients

  • 2 cups mashed potatoes
  • 2 tablespoons butter, melted
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons white sugar
  • 1/4 cup buttermilk

Directions

  1. In a medium bowl, combine the mashed potatoes, butter, flour, baking powder, salt, nutmeg, and white sugar.
  2. Mix until ingredients are fully combined.
  3. Pour in the buttermilk and mix until a soft dough forms.
  4. Divide dough into 12 equal pieces and roll each piece into a ball.
  5. On a lightly floured surface, roll each ball into a thin circle.
  6. Heat a lightly greased griddle or skillet over medium-high heat.
  7. Cook each lefse for 2-3 minutes on each side, or until lightly browned.
  8. Serve warm or at room temperature.
