Ingredients
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb scallops
- 1/2 lb crabmeat
- 3 tablespoons pesto
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup white wine
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup plain bread crumbs
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix together the shrimp, scallops, crabmeat, pesto, mozzarella, and Parmesan cheese. Set aside.
- In a medium saucepan, melt the butter over medium heat. Add the onion, bell pepper, garlic, oregano, basil, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Add the wine and cook for an additional 5 minutes.
- Add the mixture to the seafood mixture and mix well.
- Spray an 8x8 inch baking dish with cooking spray. Spread the seafood mixture into the dish and top with bread crumbs.
- Bake for 25 minutes or until the top is golden brown.
