Ingredients

  • 3 large parsnips, peeled and sliced thinly
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Toss the parsnip slices with olive oil, salt and pepper.
  3. Spread the parsnips on the baking sheet in an even layer.
  4. Bake for 20-25 minutes, flipping the chips halfway through, until golden and crispy.
  5. Serve warm or at room temperature.
