Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 3 cups cooked white rice
  • 3 cups chopped collard greens
  • 1/2 cup vegetable broth
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
  3. Add the onion, garlic, smoked paprika, and red pepper flakes to the skillet and stir to combine. Cook until the onion is softened, about 5 minutes.
  4. Add the cooked rice, collard greens, and vegetable broth to the skillet and stir to combine. Cook for about 10 minutes, stirring occasionally.
  5. Return the sausage to the skillet and stir to combine. Cook for an additional 5 minutes, or until the collard greens are wilted and the sausage is heated through.
  6. Season with salt and pepper to taste, and serve.
