Ingredients
1 pound bacon, cut into 1-inch pieces
1 onion, chopped
1 bell pepper, chopped

Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
In a large skillet over medium heat, cook the bacon until crisp. Drain on paper towels.
In the same skillet, cook the onion, bell pepper, and jalapeno pepper until tender. Remove from heat.
In a large bowl, combine the bacon, onion mixture, cheese, eggs, milk, black pepper, garlic powder, paprika, cayenne pepper, and salt. Mix well.
Add the cubed bread to the egg mixture and stir until combined.
Pour the mixture into the prepared baking dish.
Bake in preheated oven for 35 to 40 minutes, or until golden brown and set.
Interesting Facts
This dish can be prepared the night before and baked in the morning for a quick and delicious breakfast.
The jalapeno peppers add a kick of spice to the dish, but can be omitted if preferred.
The cubed bread is a great way to use up any stale bread you have lying around the house.
