Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 tablespoons toasted sesame oil
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken and cook until lightly browned, about 5 minutes.
  3. Add the bell peppers, mushrooms, garlic, ginger, and red pepper flakes and cook for another 3 minutes.
  4. Stir in the orange marmalade, soy sauce, sesame oil, and cilantro and cook for another 2 minutes.
  5. Season with salt and pepper to taste.
  6. Serve over rice or noodles.
