Ingredients
2 tablespoons olive oil
1 pound boneless skinless chicken thighs, cut into bite-sized pieces
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup sliced mushrooms
3 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1/2 cup orange marmalade
1/4 cup soy sauce
2 tablespoons toasted sesame oil
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and cook until lightly browned, about 5 minutes.
Add the bell peppers, mushrooms, garlic, ginger, and red pepper flakes and cook for another 3 minutes.
Stir in the orange marmalade, soy sauce, sesame oil, and cilantro and cook for another 2 minutes.
Season with salt and pepper to taste.
Serve over rice or noodles.
Interesting Facts
Orange marmalade adds a sweet and tangy flavor to this dish, but you can substitute with honey or a combination of honey and lemon juice.
You can substitute the bell peppers with any other vegetables you like such as zucchini or broccoli.
To make this dish vegan, simply substitute the chicken with tofu.
