Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes
- 1/2 cup orange marmalade
- 1/4 cup soy sauce
- 2 tablespoons toasted sesame oil
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook until lightly browned, about 5 minutes.
- Add the bell peppers, mushrooms, garlic, ginger, and red pepper flakes and cook for another 3 minutes.
- Stir in the orange marmalade, soy sauce, sesame oil, and cilantro and cook for another 2 minutes.
- Season with salt and pepper to taste.
- Serve over rice or noodles.
