Ingredients
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 (10-ounce) box frozen peas and carrots

Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the peas and carrots and cook for about 5 minutes more. Remove from heat.
In a large bowl, combine the cream of mushroom soup, condensed milk, and cheddar cheese. Stir in the tuna.
Spread the mixture into the prepared baking dish. Sprinkle the cracker crumbs on top.
Bake for 25 minutes, or until golden brown and bubbly.
