Ingredients

  • 3 cups fresh blueberries
  • 1/2 cup sugar
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter, melted
  • 1/4 cup cold water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together the blueberries, sugar, lemon zest, salt, and vanilla extract. Set aside.
  3. In a separate bowl, mix together the flour and melted butter until crumbly. Stir in the cold water until the mixture forms a dough.
  4. Roll out the dough on a lightly floured surface to 1/4 inch thick. Cut into 4 inch circles.
  5. Spoon the blueberry mixture into the center of each circle. Fold the sides up and pinch the edges to seal.
  6. Place the dumplings on a greased baking sheet and bake for 20 minutes, or until golden brown.
  7. Serve warm or cold, topped with a scoop of ice cream or a dollop of whipped cream.
