Ingredients

  • 1 pork tenderloin, about 1 pound
  • 1 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges

Directions

  1. Cut the pork tenderloin into 1-inch thick slices.
  2. In a shallow bowl, combine the bread crumbs, parmesan cheese, oregano, garlic powder, onion powder, salt, and pepper.
  3. In another shallow bowl, add the beaten eggs.
  4. Dip the pork slices in the egg mixture, then dredge them in the bread crumb mixture, coating them well on both sides.
  5. Heat the olive oil in a large skillet over medium-high heat. Add the pork slices and cook until golden brown, about 3-4 minutes per side.
  6. Serve the pork with the lemon wedges.
